La Posada has two renown chefs on hand who collaborate and prepare healthy choices every day for the residents.

CHEF GUY — who has worked at such famed Beverly Hills restaurants as Spago, the flagship of Wolfgang Puck, as well as the Watergate Hotel in Washington, D.C. — has been preparing his delectable cuisine in Palm Beach County for nearly two decades. With stops at country clubs restaurants such as those at Frenchman’s Reserve, Old Marsh and Grand Harbor, Chef Guy — who trained under some of the world’s top French chefs — is a master at meeting the needs of his diners. Absolutely thrilled to now be a member of the La Posada community, he stresses the following mantra to his staff that every day.

“We’re exceptional chefs, cooking exceptional food for exceptional people,” says Chef Guy as he prepares the dinner selection for the day. From sesame seared Hawaiian ahi tuna accented with picked ginger and wasabi to roasted rack of Colorado lamb paired with duchess potatoes wrapped in zucchini ribbon, baby turnip, and rosemary-infused port wine sauce. The cuisine at La Posada is always fresh and never boring. Whether it’s delivered to the resident apartments or served in the restaurant, the residents are always excited to learn what dish the chefs have prepared for them that day.

CHEF CLAY BORDAN — Having joined the La Posada community in 2018, Chef Clay brings with him a wealth of experience from top restaurants across the country — including having owned and operated his own successful eatery in Santa Fe, New Mexico. He cites the influence of the active lifestyles and dining preferences of patrons in the California restaurants he worked as the inspiration for his emphasis on healthy living. He’s renowned for making simple, subtle (yet delicious!) ingredient swaps to increase nutritional value and reduce calories, fat and sugar. For instance, you’ll love his Tuscan bean spread as a healthier alternative for butter on the tables.

“We believe in making everything from scratch and all our produce and seafood is seasonal, fresh and picked by us,” explains Chef Clay as he puts the finishing touches on his carefully prepared entrees for his residents. The selections range in scope from seared sea scallops with watermelon radish to bacon-wrapped smoked quail lollipop with cheesy stone ground grits. The mouth watering fare is comparable to any 5-star restaurant and the residents all agree that they want for nothing when it comes to chef-prepared dining at La Posada.
